Ok, I am ATTEMPTING to make homemade mozzarella cheese. Veggie rennet, not animal rennet. i didn't know i was gonna need citric acid, so I used vinegar instead. i have no idea if its gonna work...
My luck, it probably won't and all that milk and rennet will be wasted.. So, lets hope its not a wash.
IT IS CHEESE!!! HURRAY! I did it!
1/2 gallon of whole milk
1/4 rennet tablet dissolved in water
some vinegar in water
salt
Brought it up to temp, waited an hour+ drained the curds, heated them up in the nuker, and used my dough hooks on my mixer to knead it into a nice shiny ball..
I HAZ CHEEZE!
